vThis salad is similar to another tomato and cucumber salad I posted last summer, but it's nice to have several options when cucumbers and tomatoes are pouring out of your garden! We have a local source for fresh Feta and it's nice in everything. Check out the website for Northern Prairie Chevre - they love their goats!
2 cups fresh tomatoes - I used 3 medium sized yellow pear tomatoes, peeled, seeded, chopped
1 medium cucumber, seeded and sliced - I partially peel mine
1 Tbs. chopped, fresh oregano
1 Tbs. chopped, fresh parsley
1/4 - 1/3 crumbled Feta cheese
1/2 tsp salt
1/2 tsp pepper
1/2 tsp. sugar - I used dried cane sugar
Mix together gently.
Dressing:
2 cloves garlic, crushed
1-2 Tbs. red wine vinegar
2-4 Tbs. oilio
**a general rule of thumb in dressings is to use twice as much oil as vinegar or other acid
Whisk together until the garlic is evenly distributed and pour over salad.
These recipes will hopefully give you some ideas about how to use produce from your garden or farmer's market. There are also other recipes that are simply here because they are our favorites, or someone made a request at the last church lunch! I'd like to encourage you to alter these recipes to suit your own tastes, your family's needs, and to use what you have on hand. Therefore, some of my recipes will not have exact measurements.
